OLD TOM/ With a firm nod to history, the production of Greenhook Ginsmiths Old Tom Gin begins with a base grain spirit, and then is distilled with juniper and exotic spices inspired by the British Spice Trade of the 19th century. The spirit is then aged for 24 months in ex-Bourbon casks and finished in Oloroso Sherry butts. Unlike other Old Tom Gins, very little sugar is added, leading to a complex palate with a dryer finish. On the palate, this spirit has a silky texture with warm notes of juniper, allspice and cinnamon, which leads to a long, lush finish with notes of lemon verbena and almond.
